Weight Watchers Chicken Piccata
Ingredients:
- 4 boneless, skinless chicken breasts
- Salt and pepper to taste
- 1/2 cup all-purpose flour
- 2 tablespoons olive oil
- 1/2 cup low-sodium chicken broth
- 1/4 cup fresh lemon juice
- 2 tablespoons capers, drained
- 2 tablespoons chopped fresh parsley
- Lemon slices for garnish (optional)
Instructions:
- Prepare Chicken:
- Season the chicken breasts with salt and pepper. Dredge each piece in flour, shaking off excess.
- Cook Chicken:
- In a large skillet, heat olive oil over medium-high heat. Add chicken and cook until golden brown on both sides and cooked through, about 5-7 minutes per side. Remove chicken from the skillet and set aside.
- Make Sauce:
- In the same skillet, add chicken broth, lemon juice, and capers. Scrape up any browned bits from the bottom of the skillet. Simmer for 2-3 minutes to reduce slightly.
- Combine and Serve:
- Return the cooked chicken to the skillet. Spoon the sauce over the chicken. Simmer for an additional 2-3 minutes to heat the chicken through.
- Garnish and Serve:
- Garnish with chopped parsley and lemon slices if desired. Serve the chicken piccata over a bed of cooked whole grains or vegetables.
