Weight Watchers Chicken Piccata

Ingredients:

  • 4 boneless, skinless chicken breasts
  • Salt and pepper to taste
  • 1/2 cup all-purpose flour
  • 2 tablespoons olive oil
  • 1/2 cup low-sodium chicken broth
  • 1/4 cup fresh lemon juice
  • 2 tablespoons capers, drained
  • 2 tablespoons chopped fresh parsley
  • Lemon slices for garnish (optional)

Instructions:

  1. Prepare Chicken:
    • Season the chicken breasts with salt and pepper. Dredge each piece in flour, shaking off excess.
  2. Cook Chicken:
    • In a large skillet, heat olive oil over medium-high heat. Add chicken and cook until golden brown on both sides and cooked through, about 5-7 minutes per side. Remove chicken from the skillet and set aside.
  3. Make Sauce:
    • In the same skillet, add chicken broth, lemon juice, and capers. Scrape up any browned bits from the bottom of the skillet. Simmer for 2-3 minutes to reduce slightly.
  4. Combine and Serve:
    • Return the cooked chicken to the skillet. Spoon the sauce over the chicken. Simmer for an additional 2-3 minutes to heat the chicken through.
  5. Garnish and Serve:
    • Garnish with chopped parsley and lemon slices if desired. Serve the chicken piccata over a bed of cooked whole grains or vegetables.
