Ingredients:

Instructions:
- Prepare Chicken:
- Grill or bake the chicken breast until fully cooked. Dice into bite-sized pieces.
- Cook Cauliflower Rice:
- Cook cauliflower rice according to package instructions.
- Assemble Bowls:
- In meal prep containers, divide the cooked cauliflower rice among the containers.
- Add Vegetables:
- Top the cauliflower rice with cherry tomatoes, cucumber, bell peppers, and red onion.
- Add Chicken:
- Place the diced grilled chicken on top of the vegetables.
- Optional Toppings:
- If desired, sprinkle with crumbled feta cheese and sliced Kalamata olives.
- Drizzle with Sauce:
- Drizzle each bowl with tzatziki sauce or a light Greek dressing.
