Ingredients:

  • 1 lb boneless, skinless chicken breast, grilled or baked and diced
  • 2 cups cauliflower rice (cooked)
  • 1 cup cherry tomatoes, halved

  • 1 cup bell peppers (any color), sliced
  • 1/2 cup red onion, finely chopped
  • 1/4 cup feta cheese, crumbled (optional)
  • 1/4 cup Kalamata olives, pitted and sliced (optional)
  • 1/4 cup tzatziki sauce or a light Greek dressing
  • Fresh lemon wedges for serving
  • Fresh parsley or dill for garnish (optional)

Instructions:

  1. Prepare Chicken:
    • Grill or bake the chicken breast until fully cooked. Dice into bite-sized pieces.
  2. Cook Cauliflower Rice:
    • Cook cauliflower rice according to package instructions.
  3. Assemble Bowls:
    • In meal prep containers, divide the cooked cauliflower rice among the containers.
  4. Add Vegetables:
    • Top the cauliflower rice with cherry tomatoes, cucumber, bell peppers, and red onion.
  5. Add Chicken:
    • Place the diced grilled chicken on top of the vegetables.
  6. Optional Toppings:
    • If desired, sprinkle with crumbled feta cheese and sliced Kalamata olives.
  7. Drizzle with Sauce:
    • Drizzle each bowl with tzatziki sauce or a light Greek dressing.
  8. Garnish and Serve:
    • Garnish with fresh herbs like parsley or dill if desired.
    • Serve with fresh lemon wedges on the side.
