Weight Watchers Chicken Bacon Ranch Potatoes

Ingredients:-

  • 4 medium-sized potatoes, washed and cubed
  • 1 lb boneless, skinless chicken breasts, diced
  • 4 slices turkey bacon, cooked and crumbled
  • 1 cup reduced-fat shredded cheddar cheese
  • 1/4 cup light ranch dressing
  • Salt and pepper to taste
  • Chopped fresh chives or green onions for garnish (optional)

Instructions:-

  1. Preheat your oven to 400°F (200°C).
  2. Place the cubed potatoes on a baking sheet lined with parchment paper. Season with salt and pepper, and bake for about 20-25 minutes or until they’re tender and lightly golden.
  3. While the potatoes are baking, in a skillet over medium-high heat, cook the diced chicken until it’s no longer pink and cooked through. Season with salt and pepper to taste.
  4. Once the potatoes are done, remove them from the oven and keep the oven on.
  5. In a large mixing bowl, combine the cooked chicken, crumbled turkey bacon, and light ranch dressing. Mix well.
  6. Spread the chicken and bacon mixture evenly over the baked potatoes on the baking sheet.
  7. Sprinkle the shredded cheddar cheese on top of the chicken and bacon mixture.
  8. Place the baking sheet back in the oven and bake for an additional 5-7 minutes, or until the cheese is melted and bubbly.
  9. Once done, remove from the oven and garnish with chopped fresh chives or green onions if desired….
