Weight Watchers Cherry Fluff Salad

Ingredients:

  • 1 can (20 oz) unsweetened crushed pineapple, undrained
  • 1 package (0.3 oz) sugar-free cherry gelatin
  • 1 package (0.3 oz) sugar-free raspberry gelatin
  • 1 cup boiling water
  • 1 package (8 oz) fat-free cream cheese, softened
  • 1 cup fat-free whipped topping
  • 1 can (15 oz) dark sweet cherries, drained
  • 1/2 cup chopped pecans (optional)

Instructions:

  1. In a large bowl, combine the crushed pineapple (with juice), sugar-free cherry gelatin, and sugar-free raspberry gelatin.
  2. Pour in the boiling water and stir until the gelatin is completely dissolved.
  3. In a separate bowl, beat the softened fat-free cream cheese until smooth.
  4. Add the cream cheese to the gelatin mixture and stir until well combined.
  5. Fold in the fat-free whipped topping until the mixture is smooth.
  6. Gently stir in the drained dark sweet cherries.
  7. If desired, add chopped pecans for added texture.
  8. Refrigerate the cherry fluff salad for at least 2 hours or until set.
  9. Serve chilled and enjoy this delicious and low-point Weight Watchers dessert!
