Weight Watchers Cheesy Taco Soup

Ingredients:-

  • 1 lb (450g) extra lean ground beef or turkey
  • 1 onion, diced
  • 1 bell pepper, diced
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (15 oz) diced tomatoes
  • 1 can (4 oz) diced green chilies
  • 1 packet reduced-sodium taco seasoning
  • 1 packet ranch seasoning mix
  • 4 cups reduced-sodium beef or chicken broth
  • 1 cup reduced-fat shredded cheddar cheese
  • Optional toppings: chopped green onions, low-fat sour cream, diced avocado, cilantro, etc.

Instructions:-

  1. In a large pot or Dutch oven, cook the ground beef or turkey over medium heat until browned. Drain any excess fat.
  2. Add the diced onion and bell pepper to the pot and cook for a few minutes until they begin to soften.
  3. Stir in the black beans, kidney beans, corn, diced tomatoes, green chilies, taco seasoning, ranch seasoning, and broth. Mix well.
  4. Bring the mixture to a boil, then reduce the heat to low. Let it simmer uncovered for about 20-25 minutes, stirring occasionally.
  5. Once the soup has simmered and the flavors have melded together, remove it from heat.
  6. Add in the shredded cheddar cheese and stir until it’s melted and well incorporated into the soup.
