Weight Watchers Cheesy Taco Soup

Ingredients:-
- 1 lb (450g) extra lean ground beef or turkey
- 1 onion, diced
- 1 bell pepper, diced
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (15 oz) diced tomatoes
- 1 can (4 oz) diced green chilies
- 1 packet reduced-sodium taco seasoning
- 1 packet ranch seasoning mix
- 4 cups reduced-sodium beef or chicken broth
- 1 cup reduced-fat shredded cheddar cheese
- Optional toppings: chopped green onions, low-fat sour cream, diced avocado, cilantro, etc.
Instructions:-
- In a large pot or Dutch oven, cook the ground beef or turkey over medium heat until browned. Drain any excess fat.
- Add the diced onion and bell pepper to the pot and cook for a few minutes until they begin to soften.
- Stir in the black beans, kidney beans, corn, diced tomatoes, green chilies, taco seasoning, ranch seasoning, and broth. Mix well.
- Bring the mixture to a boil, then reduce the heat to low. Let it simmer uncovered for about 20-25 minutes, stirring occasionally.
- Once the soup has simmered and the flavors have melded together, remove it from heat.
- Add in the shredded cheddar cheese and stir until it’s melted and well incorporated into the soup.
