Weight Watchers Cheesy Taco Soup

Ingredients:-

  • 1 lb lean ground turkey or chicken
  • 1 onion, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (15 oz) diced tomatoes
  • 1 can (4 oz) diced green chilies
  • 4 cups low-sodium chicken broth
  • 1 packet low-sodium taco seasoning
  • 1 cup reduced-fat shredded cheddar cheese
  • Salt and pepper to taste
  • Optional toppings: chopped green onions, cilantro, low-fat sour cream

Instructions:-

  1. In a large pot or Dutch oven, brown the ground turkey or chicken over medium heat until cooked through. Drain any excess fat.
  2. Add diced onion, bell pepper, and minced garlic to the pot. Cook for a few minutes until the vegetables are softened.
  3. Stir in the black beans, kidney beans, corn, diced tomatoes, diced green chilies, chicken broth, and taco seasoning. Bring the mixture to a boil.
  4. Reduce the heat and let the soup simmer for about 15-20 minutes, allowing the flavors to meld together. Season with salt and pepper to taste.
  5. Just before serving, stir in the shredded cheddar cheese until it melts and incorporates into the soup.
  6. Ladle the soup into bowls and top with optional toppings like chopped green onions, cilantro, or a dollop of low-fat sour cream….
