Weight Watchers Cheesecake Salad
Ingredients:
- 2 cups fat-free Greek yogurt (plain or vanilla flavored)
- 4 oz fat-free cream cheese, softened
- 1/4 cup powdered sugar (or sugar substitute for fewer calories)
- 1 teaspoon vanilla extract
- 1 cup fresh strawberries, diced
- 1 cup fresh blueberries
- 1 cup fresh raspberries
- 1 cup mini marshmallows (optional, adjust based on preference)
- Mint leaves for garnish (optional)
Instructions:
- In a mixing bowl, combine the fat-free Greek yogurt, softened fat-free cream cheese, powdered sugar (or sugar substitute), and vanilla extract. Mix until smooth and well combined. Adjust sweetness to your taste.
- Gently fold in the diced strawberries, blueberries, raspberries, and mini marshmallows (if using) into the yogurt mixture until they are evenly distributed.
- Cover the bowl and refrigerate the Cheesecake Salad for at least 30 minutes to allow the flavors to meld together.
- Before serving, garnish with fresh mint leaves if desired.
