Weight Watchers Cheesecake Salad

Ingredients:

  • 2 cups fat-free Greek yogurt (plain or vanilla flavored)
  • 4 oz fat-free cream cheese, softened
  • 1/4 cup powdered sugar (or sugar substitute for fewer calories)
  • 1 teaspoon vanilla extract
  • 1 cup fresh strawberries, diced
  • 1 cup fresh blueberries
  • 1 cup fresh raspberries
  • 1 cup mini marshmallows (optional, adjust based on preference)
  • Mint leaves for garnish (optional)

Instructions:

  1. In a mixing bowl, combine the fat-free Greek yogurt, softened fat-free cream cheese, powdered sugar (or sugar substitute), and vanilla extract. Mix until smooth and well combined. Adjust sweetness to your taste.
  2. Gently fold in the diced strawberries, blueberries, raspberries, and mini marshmallows (if using) into the yogurt mixture until they are evenly distributed.
  3. Cover the bowl and refrigerate the Cheesecake Salad for at least 30 minutes to allow the flavors to meld together.
  4. Before serving, garnish with fresh mint leaves if desired.
