Weight watchers cheesecake

Ingredients:

  • 3 cups plain fat-free Greek yogurt
  • 1 package (1 oz) sugar-free, fat-free cheesecake-flavored instant pudding mix
  • 3 large eggs
  • 1 tablespoon vanilla extract
  • Optional: 6 packets of your preferred sugar substitute (e.g., Stevia, monk fruit sweetener)​

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the Greek yogurt, pudding mix, eggs, vanilla extract, and sugar substitute (if using). Mix until smooth and well-blended.
  3. Pour the mixture into a 6-inch non-stick springform pan or any round cake pan you have on hand.
  4. Bake for 30 minutes. After baking, turn off the oven and let the cheesecake sit inside for an additional 15 minutes.
  5. Remove the cheesecake from the oven and allow it to cool to room temperature.
  6. Refrigerate for at least 3 hours, preferably overnight, to let it set properly.
  7. Slice into 8 servings.​
