Weight Watchers Cheese Shrimp Penne Pasta & Spinach:

Ingredients:
- 8 oz whole wheat penne pasta
- 1 lb large shrimp, peeled and deveined
- 2 cups fresh spinach, washed
- 1 tablespoon olive oil
- 3 cloves garlic, minced
- 1 cup cherry tomatoes, halved
- 1/2 cup reduced-fat shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- Salt and pepper to taste
- Crushed red pepper flakes (optional, for added spice)
- Fresh basil or parsley for garnish (optional)
Instructions:
- Cook the Pasta:
- Cook the whole wheat penne pasta according to package instructions until al dente. Drain and set aside.
- Prepare Shrimp:
- In a large skillet, heat olive oil over medium heat.
- Add minced garlic and sauté for about 30 seconds until fragrant.
- Add shrimp to the skillet and cook until they turn pink and opaque. Season with salt and pepper to taste.
- Add Vegetables:
- Add halved cherry tomatoes to the skillet and sauté for an additional 2-3 minutes until they start to soften.
- Combine Pasta, Spinach, and Cheese:
- Add the cooked penne pasta to the skillet along with fresh spinach. Toss until the spinach wilts.
- Stir in shredded mozzarella cheese and grated Parmesan cheese. Mix until the cheese is melted and everything is well combined.
- Adjust Seasoning:
- Season with additional salt, pepper, and optional crushed red pepper flakes according to taste.
- Serve:
- Divide the pasta and shrimp mixture among serving plates.
- Garnish with fresh basil or parsley if desired.
