Weight Watchers Cheese Shrimp Penne Pasta & Spinach:

Ingredients:

  • 8 oz whole wheat penne pasta
  • 1 lb large shrimp, peeled and deveined
  • 2 cups fresh spinach, washed
  • 1 tablespoon olive oil
  • 3 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup reduced-fat shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Crushed red pepper flakes (optional, for added spice)
  • Fresh basil or parsley for garnish (optional)

Instructions:

  1. Cook the Pasta:
    • Cook the whole wheat penne pasta according to package instructions until al dente. Drain and set aside.
  2. Prepare Shrimp:
    • In a large skillet, heat olive oil over medium heat.
    • Add minced garlic and sauté for about 30 seconds until fragrant.
    • Add shrimp to the skillet and cook until they turn pink and opaque. Season with salt and pepper to taste.
  3. Add Vegetables:
    • Add halved cherry tomatoes to the skillet and sauté for an additional 2-3 minutes until they start to soften.
  4. Combine Pasta, Spinach, and Cheese:
    • Add the cooked penne pasta to the skillet along with fresh spinach. Toss until the spinach wilts.
    • Stir in shredded mozzarella cheese and grated Parmesan cheese. Mix until the cheese is melted and everything is well combined.
  5. Adjust Seasoning:
    • Season with additional salt, pepper, and optional crushed red pepper flakes according to taste.
  6. Serve:
    • Divide the pasta and shrimp mixture among serving plates.
    • Garnish with fresh basil or parsley if desired.
