Weight Watchers Broccoli Salad

Ingredients:

  • 4 cups fresh broccoli florets
  • 1/2 cup red onion, finely chopped
  • 1/2 cup raisins or dried cranberries (unsweetened)
  • 1/4 cup sunflower seeds (unsalted)
  • 1/2 cup non-fat Greek yogurt
  • 2 tablespoons light mayonnaise
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon honey or maple syrup (optional, for a touch of sweetness)
  • Salt and pepper to taste

Instructions:

  1. Prepare Broccoli:
    • Wash the broccoli thoroughly and cut it into small bite-sized florets.
  2. Mix Vegetables:
    • In a large bowl, combine the broccoli florets, chopped red onion, raisins or dried cranberries, and sunflower seeds.
  3. Prepare Dressing:
    • In a separate bowl, whisk together Greek yogurt, light mayonnaise, apple cider vinegar, and honey or maple syrup (if using). Adjust the sweetness according to your preference.
  4. Combine Salad and Dressing:
    • Pour the dressing over the broccoli mixture and toss until everything is well coated.
  5. Season:
    • Season the salad with salt and pepper to taste. Remember to go easy on the salt if your sunflower seeds are salted.
  6. Chill:
    • Refrigerate the salad for at least 30 minutes before serving. This allows the flavors to meld together.
  7. Serve:
    • Serve the Weight Watchers broccoli salad chilled. It’s a delicious and healthy side dish for any meal!
