Weight Watchers Broccoli Salad
Ingredients:
- 4 cups fresh broccoli florets
- 1/2 cup red onion, finely chopped
- 1/2 cup raisins or dried cranberries (unsweetened)
- 1/4 cup sunflower seeds (unsalted)
- 1/2 cup non-fat Greek yogurt
- 2 tablespoons light mayonnaise
- 1 tablespoon apple cider vinegar
- 1 tablespoon honey or maple syrup (optional, for a touch of sweetness)
- Salt and pepper to taste
Instructions:
- Prepare Broccoli:
- Wash the broccoli thoroughly and cut it into small bite-sized florets.
- Mix Vegetables:
- In a large bowl, combine the broccoli florets, chopped red onion, raisins or dried cranberries, and sunflower seeds.
- Prepare Dressing:
- In a separate bowl, whisk together Greek yogurt, light mayonnaise, apple cider vinegar, and honey or maple syrup (if using). Adjust the sweetness according to your preference.
- Combine Salad and Dressing:
- Pour the dressing over the broccoli mixture and toss until everything is well coated.
- Season:
- Season the salad with salt and pepper to taste. Remember to go easy on the salt if your sunflower seeds are salted.
- Chill:
- Refrigerate the salad for at least 30 minutes before serving. This allows the flavors to meld together.
