Weight Watchers Baked Sweet and Sour Chicken
Ingredients:
For the Chicken:
- 1.5 lbs boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 cup cornstarch
- 2 large eggs, beaten
- Salt and pepper to taste
- Cooking spray
For the Sweet and Sour Sauce:
- 1 cup pineapple juice (unsweetened)
- 1/4 cup rice vinegar
- 1/4 cup reduced-sodium soy sauce
- 1/2 cup ketchup
- 1/3 cup granulated sugar or a sugar substitute
- 2 tablespoons cornstarch
- 1 bell pepper, cut into chunks
- 1 cup pineapple chunks (fresh or canned, drained)
Instructions:
- Preheat the oven to 375°F (190°C).
- In one bowl, season the chicken pieces with salt and pepper. In a separate bowl, coat the chicken pieces with cornstarch, then dip them into beaten eggs.
- Place the coated chicken on a baking sheet lined with parchment paper. Lightly spray the chicken with cooking spray.
- Bake the chicken in the preheated oven for about 20-25 minutes or until golden brown and cooked through.
- While the chicken is baking, prepare the sweet and sour sauce. In a saucepan, combine pineapple juice, rice vinegar, soy sauce, ketchup, sugar, and cornstarch. Cook over medium heat, stirring constantly until the sauce thickens.
- In a large skillet, sauté the bell pepper chunks until slightly tender.
- Add the pineapple chunks to the skillet and pour the sweet and sour sauce over the vegetables. Stir to combine.
- Once the chicken is done baking, add it to the skillet with the sweet and sour sauce and vegetables. Toss until the chicken is well coated.
- Serve the Weight Watchers Baked Sweet and Sour Chicken over brown rice or cauliflower rice if you prefer a lower-carb option
