Weight Watchers Avgolemono Soup

Ingredients:
- 1 tsp olive oil
- 2 medium shallots (or 1 small onion), chopped
- 3 cups reduced-sodium chicken broth
- ⅓ cup uncooked orzo (or other small pasta)
- ¾ cup cooked, chopped skinless boneless chicken breast
- 1 large egg
- 2 Tbsp fresh lemon juice
- 1 Tbsp chopped fresh dill
- ⅛ tsp black pepper
Instructions:
- In a medium saucepan, heat olive oil over medium heat. Add chopped shallots and sauté until golden, about 4 minutes, stirring frequently.
- Add chicken broth and orzo to the saucepan. Bring to a boil over high heat. Reduce heat to low, cover, and simmer until orzo is tender, about 10 minutes.
- Stir in the chopped chicken and simmer until heated through, about 1 minute.
- In a small bowl, lightly beat the egg and lemon juice together. Gradually stir about 2 tablespoons of the hot broth into the egg mixture to temper it. Slowly pour the tempered egg mixture back into the simmering soup, stirring constantly. Cook until the soup thickens slightly, 1 to 2 minutes.
- Sprinkle with chopped dill and black pepper before serving.
