INGREDIENTS 

  • 7 baked low fat corn tortilla chips
  • 2 ounces Deli style roast beef slices cut into strips
  • ¼ teaspoon dried oregano
  • ¼ teaspoon ground cumin
  • 2 tablespoon shredded reduced-fat Mexican cheese blend
  • 2 tablespoon pickled jalapeno pepper chopped/sliced
  • 2½ tablespoon fresh fat-free salsa (drained if very liquid)

INSTRUCTIONS 

  • Place tortilla chips in a single layer on a microwave-safe plate.
  • Microwave them for 30 seconds.
  • While the chips are in the microwave, mix roast beef with cumin and oregano.
  • Take out the chips from the microwave and evenly spread the beef mixture on top.
  • Sprinkle cheese over the beef and chips.
  • Microwave for another 30 seconds until the beef is hot and the cheese melts. You can also bake it in the oven if you prefer.
  • Add jalapenos and salsa on top.
  • Garnish with cilantro.
