Weight Watcher Taco Pie

Ingredients:

  • 1 lb lean ground turkey (or lean ground beef)
  • 1 packet taco seasoning (or homemade taco seasoning)
  • 1 can (14.5 oz) diced tomatoes, drained
  • 1 cup fat-free refried beans
  • 1/2 cup reduced-fat shredded cheddar cheese
  • 1/2 cup reduced-fat sour cream (optional for topping)
  • 1/4 cup chopped green onions
  • 1/4 cup chopped cilantro (optional)
  • 1 whole wheat tortilla or 6 small corn tortillas (optional for the crust)
  • Cooking spray

Instructions:

  1. Preheat your oven to 375°F (190°C) and spray a 9-inch pie pan or baking dish with cooking spray.
  2. Cook the ground turkey in a skillet over medium heat until browned. Break it up into crumbles as it cooks. Drain any excess fat.
  3. Add the taco seasoning and diced tomatoes to the turkey. Stir well and simmer for about 5 minutes until everything is well combined.
  4. Prepare the pie base by spreading a thin layer of fat-free refried beans in the bottom of the prepared baking dish.
  5. Layer the taco filling: Once the turkey mixture is ready, spoon it evenly over the refried beans layer.
  6. Top with cheese: Sprinkle the reduced-fat shredded cheddar cheese over the taco mixture.
  7. Bake for 15-20 minutes or until the cheese is melted and bubbly.
  8. Optional toppings: Once out of the oven, top with sour cream, chopped green onions, and cilantro if desired.
  9. Serve and enjoy! Slice like a pie and serve with a side of fresh salad or salsa.
