Weight Watcher Taco Pie

Ingredients:
- 1 lb lean ground turkey (or lean ground beef)
- 1 packet taco seasoning (or homemade taco seasoning)
- 1 can (14.5 oz) diced tomatoes, drained
- 1 cup fat-free refried beans
- 1/2 cup reduced-fat shredded cheddar cheese
- 1/2 cup reduced-fat sour cream (optional for topping)
- 1/4 cup chopped green onions
- 1/4 cup chopped cilantro (optional)
- 1 whole wheat tortilla or 6 small corn tortillas (optional for the crust)
- Cooking spray
Instructions:
- Preheat your oven to 375°F (190°C) and spray a 9-inch pie pan or baking dish with cooking spray.
- Cook the ground turkey in a skillet over medium heat until browned. Break it up into crumbles as it cooks. Drain any excess fat.
- Add the taco seasoning and diced tomatoes to the turkey. Stir well and simmer for about 5 minutes until everything is well combined.
- Prepare the pie base by spreading a thin layer of fat-free refried beans in the bottom of the prepared baking dish.
- Layer the taco filling: Once the turkey mixture is ready, spoon it evenly over the refried beans layer.
- Top with cheese: Sprinkle the reduced-fat shredded cheddar cheese over the taco mixture.
- Bake for 15-20 minutes or until the cheese is melted and bubbly.
- Optional toppings: Once out of the oven, top with sour cream, chopped green onions, and cilantro if desired.
- Serve and enjoy! Slice like a pie and serve with a side of fresh salad or salsa.
