Weight Watcher Chicken Soup.

Ingredients:

  • 2 tsp olive oil (or cooking spray for 0 points)
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 3 carrots, sliced
  • 2 celery stalks, sliced
  • 1 tsp dried thyme
  • 1 tsp dried parsley
  • 1/2 tsp black pepper
  • Salt to taste
  • 6 cups low-sodium chicken broth
  • 2 cups cooked, shredded skinless chicken breast
  • 1.5 cups chopped spinach or kale (optional)
  • Juice of 1/2 lemon (optional, for brightness)

🍲 Instructions:

  1. Sauté veggies:
    In a large pot, heat olive oil (or spray with cooking spray). Sauté onion, garlic, carrots, and celery for 5–6 minutes until softened.
  2. Add seasonings:
    Stir in thyme, parsley, pepper, and a pinch of salt. Cook for 1 more minute.
  3. Pour broth:
    Add chicken broth and bring to a gentle boil.
  4. Simmer:
    Lower heat and let it simmer for 15–20 minutes, until vegetables are tender.
  5. Add chicken & greens:
    Stir in the cooked shredded chicken and spinach/kale. Simmer another 5 minutes.
  6. Finish with lemon:
    Add a squeeze of lemon juice if desired. Taste and adjust seasoning.

🍽️ Tips & Variations:

  • Use rotisserie chicken breast for ease (remove skin for lower points).
  • Add zucchini noodles or cauliflower rice for more volume.
  • Want it creamy? Add a spoon of low-fat plain Greek yogurt after it cools slightly (1 extra point max).
