Walking Taco Casserole Recipe
Ingredients:
- 1 lb ground beef
- 1 packet taco seasoning (sugar-free or homemade keto-friendly)
- 1/4 cup water
- 1 cup shredded cheddar cheese
- 1/2 cup cream cheese
- 1/4 cup sour cream
- 1 cup shredded lettuce
- 1/2 cup diced tomatoes
- 1/4 cup sliced black olives (optional)
- 1 avocado, diced (optional)
- 1/4 cup chopped green onions
- Pork rinds or low-carb tortilla chips for crunch
Instructions:
- Preheat Oven: Set your oven to 350°F (175°C).
- Cook the Beef: In a large skillet over medium heat, cook the ground beef until browned. Drain excess grease.
- Season: Add taco seasoning and water to the beef. Stir and simmer for 3-5 minutes until thickened.
- Mix Cheeses: Reduce heat to low, add cream cheese and sour cream to the beef. Stir until melted and creamy.
- Assemble the Casserole: Pour the beef mixture into a greased baking dish. Sprinkle shredded cheddar cheese evenly on top.
- Bake: Place in the oven and bake for 10-15 minutes, until the cheese is melted and bubbly.
- Top & Serve: Once out of the oven, top with shredded lettuce, diced tomatoes, black olives, avocado, and green onions. Serve with pork rinds or low-carb tortilla chips for that taco crunch!
