Ingredients:
- 1 medium head cauliflower, grated or processed into rice-like texture
- 1/2 cup shredded mozzarella cheese (part-skim)
- 1/4 cup grated Parmesan cheese
- 1 egg, beaten
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried basil
- 1/4 teaspoon garlic powder
- Salt and pepper to taste
- Pizza sauce (look for low-sugar options)
- Toppings of your choice (e.g., bell peppers, onions, mushrooms, spinach, turkey pepperoni)
- Additional shredded mozzarella cheese (for topping)
Instructions:
- Preheat your oven to 400°F (200°C).
- Microwave or steam the grated cauliflower until tender. Let it cool, then squeeze out excess moisture using a clean kitchen towel.
- In a bowl, combine the cauliflower, mozzarella cheese, Parmesan cheese, beaten egg, oregano, basil, garlic powder, salt, and pepper. Mix well.
- Line a baking sheet with parchment paper. Press the cauliflower mixture into a thin, round crust shape, about 1/4 inch thick.
- Bake the crust for 20-25 minutes or until golden and firm to touch.
- Remove the crust from the oven. Spread pizza sauce evenly over the crust, leaving a small border around the edges.
- Add your choice of toppings and sprinkle with additional shredded mozzarella cheese.
- Return the pizza to the oven and bake for another 10-15 minutes, until the cheese is melted and bubbly.
- Let the pizza cool slightly before slicing and serving
