Weight Watchers Homemade Hamburger Peppers and Onion Gyros (Per Serving):
Ingredients:
- 1 lb lean ground beef (or ground turkey for a lighter option)
- 1 large onion, thinly sliced
- 1 bell pepper, thinly sliced (choose your preferred color)
- 2 cloves garlic, minced
- 1 teaspoon olive oil
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon paprika
- Salt and pepper to taste
- Whole wheat pita bread or flatbreads (choose a low-point option)
- Tzatziki sauce (use a low-fat or Greek yogurt-based version)
- Fresh tomatoes, diced
- Lettuce, shredded
Instructions:
- In a large skillet, heat olive oil over medium heat. Add sliced onions, bell peppers, and minced garlic. Sauté until vegetables are tender, about 5-7 minutes.
- Push the vegetables to the side of the skillet and add the ground beef to the other side. Cook the beef until browned, breaking it apart with a spatula as it cooks.
- Once the beef is cooked, mix it with the sautéed vegetables. Add ground cumin, ground coriander, paprika, salt, and pepper. Stir well to combine and let it simmer for a few more minutes.
- Warm the whole wheat pita bread or flatbreads.
- Assemble the gyros by placing a generous portion of the beef and vegetable mixture onto the warmed pita bread.
- Top with diced tomatoes, shredded lettuce, and a dollop of tzatziki sauce.
- Fold the pita bread over the filling, creating a gyro.
