Weight Watchers Homemade Hamburger Peppers and Onion Gyros (Per Serving):

Ingredients:

  • 1 lb lean ground beef (or ground turkey for a lighter option)
  • 1 large onion, thinly sliced
  • 1 bell pepper, thinly sliced (choose your preferred color)
  • 2 cloves garlic, minced
  • 1 teaspoon olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Whole wheat pita bread or flatbreads (choose a low-point option)
  • Tzatziki sauce (use a low-fat or Greek yogurt-based version)
  • Fresh tomatoes, diced
  • Lettuce, shredded

Instructions:

  1. In a large skillet, heat olive oil over medium heat. Add sliced onions, bell peppers, and minced garlic. Sauté until vegetables are tender, about 5-7 minutes.
  2. Push the vegetables to the side of the skillet and add the ground beef to the other side. Cook the beef until browned, breaking it apart with a spatula as it cooks.
  3. Once the beef is cooked, mix it with the sautéed vegetables. Add ground cumin, ground coriander, paprika, salt, and pepper. Stir well to combine and let it simmer for a few more minutes.
  4. Warm the whole wheat pita bread or flatbreads.
  5. Assemble the gyros by placing a generous portion of the beef and vegetable mixture onto the warmed pita bread.
  6. Top with diced tomatoes, shredded lettuce, and a dollop of tzatziki sauce.
  7. Fold the pita bread over the filling, creating a gyro.
  8. Serve immediately and enjoy your Weight Watchers-friendly homemade hamburger peppers and onion gyros!
