Vegcano Burrito

This vegan burrito is inspired by the Taco Bell Volcano Menu, featuring a spicy and cheesy sauce, seasoned plant-based beef, rice, sour cream, cheese, and tortilla strips. It’s easy to make and satisfying to eat!

Ingredients:

  • 1/4 cup raw cashews
  • 1/4 cup nutritional yeast
  • 1/4 cup pickled jalapeno juice
  • 2 tablespoons lime juice
  • 2 garlic cloves
  • 2 chipotle peppers in adobo sauce
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon MSG (optional)
  • 1/4 teaspoon smoked paprika
  • 1/4 teaspoon salt
  • 1/4 cup water, or more as needed
  • 1 tablespoon oil
  • 12 ounces plant-based ground beef (such as Beyond Meat or Impossible Foods)
  • 1 teaspoon taco seasoning
  • 2 cups cooked white rice
  • 4 Siete grain-free tortillas (or your favorite tortillas)
  • 1/4 cup Kite Hill dairy-free sour cream (or your favorite vegan sour cream)
  • 1/4 cup Violife vegan cheddar shreds (or your favorite vegan cheese)
  • 1/4 cup tortilla strips

Instructions:

  • To make the Vegcano sauce, soak the cashews in hot water for 15 minutes, then drain and rinse. Transfer to a blender along with the nutritional yeast, jalapeno juice, lime juice, garlic, chipotle peppers, chili powder, cumin, MSG (if using), smoked paprika, salt, and water. Blend until smooth and creamy, adding more water if needed to adjust the consistency. Set aside.
  • To make the seasoned beef, heat the oil in a skillet over medium-high heat. Add the plant-based ground beef and taco seasoning and cook, breaking it up with a spatula, for about 15 minutes, or until browned and crisp. Set aside.
  • To assemble the burritos, warm the tortillas in a microwave or on a griddle. Spoon about 1/2 cup of rice over each tortilla, leaving some space around the edges. Drizzle about 2 tablespoons of Vegcano sauce over the rice. Top with about 1/4 cup of seasoned beef, 1 tablespoon of sour cream, 1 tablespoon of cheese shreds, and 1 tablespoon of tortilla strips. Fold the bottom edge of the tortilla over the filling, then fold in the sides and roll up tightly.
  • To serve, cut the burritos in half and enjoy with more Vegcano sauce if desired.
