Ingredients
- 1 medium zucchini, thinly sliced (about β inch thick)
- 1 tbsp olive oil or avocado oil
- Β½ cup breadcrumbs (panko or regular β use gluten-free if needed)
- 2 tbsp nutritional yeast (adds a cheesy flavor)
- Β½ tsp garlic powder
- Β½ tsp onion powder
- ΒΌ tsp smoked paprika (optional)
- Salt and pepper, to taste
Optional Dipping Sauce Ideas:
- Vegan ranch
- Hummus
- Spicy sriracha mayo (vegan mayo + sriracha)
Instructions
β 1. Prep Zucchini:
- Wash and thinly slice the zucchini using a knife or mandoline.
- Pat slices dry with a paper towel to remove excess moisture.
β 2. Set Up Coating:
- In a shallow bowl, mix breadcrumbs, nutritional yeast, garlic powder, onion powder, smoked paprika, salt, and pepper.
β 3. Coat Zucchini:
- Toss zucchini slices in olive oil to coat.
- Press each slice into the breadcrumb mixture, coating both sides.
β 4. Cook:
β‘οΈ Option A: Bake
- Preheat oven to 425Β°F (220Β°C).
- Place slices on a parchment-lined baking sheet.
- Bake for 20β25 minutes, flipping halfway, until golden and crispy.
β‘οΈ Option B: Air Fryer
- Preheat air fryer to 400Β°F (200Β°C).
- Arrange slices in a single layer (work in batches if needed).
- Air-fry for 10β12 minutes, shaking or flipping halfway through.
β 5. Serve Immediately
- Enjoy warm and crispy, optionally with a dipping sauce
