🥣 Vegan Vegetable Soup (Blood Sugar-Friendly)


✅ Ingredients:
2 medium potatoes, peeled and diced

1 large carrot, sliced or diced

1 bell pepper (any color), chopped

1/2 small head of green or white cabbage, shredded

1 small onion, chopped (optional but recommended)

2–3 garlic cloves, minced

6 cups vegetable broth or water

1 tbsp olive oil (optional)

1 tsp paprika

1/2 tsp ground cumin (optional, supports digestion and blood sugar balance)

Salt and pepper to taste

Fresh parsley or dill for garnish (optional)

👩‍🍳 Instructions:


Sauté aromatics (optional step):
In a large soup pot, heat olive oil over medium heat. Add chopped onion and garlic, and sauté for 3–4 minutes until soft and fragrant. (You can skip oil and sauté in a bit of water for an oil-free version.)

Add vegetables:
Stir in diced potatoes, carrots, and bell pepper. Cook for 5 minutes, stirring occasionally.

Add cabbage and spices:
Add shredded cabbage, paprika, cumin (if using), salt, and pepper. Stir to coat veggies with spices.

Pour in broth:
Add vegetable broth or water. Bring to a boil, then reduce heat and simmer uncovered for 20–25 minutes, or until all vegetables are tender.

Taste and adjust:
Add more salt, pepper, or herbs to taste.

Serve hot, garnished with fresh parsley or dill if desired.
