Vegan Teriyaki Sauce Recipe
Ingredients:
- 1/2 cup soy sauce (make sure it’s labeled as vegan)
- 1/4 cup water
- 1/4 cup brown sugar
- 2 cloves garlic, minced
- 1 teaspoon grated ginger
- 1 tablespoon cornstarch (or arrowroot powder) mixed with 2 tablespoons water (to thicken)
Instructions:
- In a small saucepan, combine the soy sauce, water, brown sugar, minced garlic, and grated ginger. Stir well to combine.
- Heat the mixture over medium heat until it starts to simmer, then reduce the heat to low and let it simmer gently for about 5 minutes, stirring occasionally.
- In a small bowl, mix the cornstarch (or arrowroot powder) with water until it forms a smooth slurry.
- Pour the cornstarch slurry into the saucepan with the simmering sauce, stirring constantly. Continue to cook for another 2-3 minutes, or until the sauce has thickened to your desired consistency.
- Once the sauce has thickened, remove it from the heat and let it cool slightly before using. It will continue to thicken as it cools.
- Use the teriyaki sauce immediately as a marinade for tofu, vegetables, or whatever you desire, or store it in an airtight container in the refrigerator for up to a week.
