Vegan Teriyaki Sauce Recipe

Ingredients:

  • 1/2 cup soy sauce (make sure it’s labeled as vegan)
  • 1/4 cup water
  • 1/4 cup brown sugar
  • 2 cloves garlic, minced
  • 1 teaspoon grated ginger
  • 1 tablespoon cornstarch (or arrowroot powder) mixed with 2 tablespoons water (to thicken)

Instructions:

  1. In a small saucepan, combine the soy sauce, water, brown sugar, minced garlic, and grated ginger. Stir well to combine.
  2. Heat the mixture over medium heat until it starts to simmer, then reduce the heat to low and let it simmer gently for about 5 minutes, stirring occasionally.
  3. In a small bowl, mix the cornstarch (or arrowroot powder) with water until it forms a smooth slurry.
  4. Pour the cornstarch slurry into the saucepan with the simmering sauce, stirring constantly. Continue to cook for another 2-3 minutes, or until the sauce has thickened to your desired consistency.
  5. Once the sauce has thickened, remove it from the heat and let it cool slightly before using. It will continue to thicken as it cools.
  6. Use the teriyaki sauce immediately as a marinade for tofu, vegetables, or whatever you desire, or store it in an airtight container in the refrigerator for up to a week.
