🥪 Vegan Tea Sandwich Trio

- Cucumber-Dill Cream Cheese
Fresh, light, and classic.
Ingredients:
1 small cucumber, thinly sliced
½ cup vegan cream cheese (like Kite Hill or homemade)
1 tsp fresh dill (or ½ tsp dried)
Salt & pepper to taste
Thin sandwich bread (white or whole wheat, crusts removed)
How to Make:
Mix cream cheese, dill, salt, and pepper.
Spread on both slices of bread.
Layer cucumber slices, close sandwich, and cut into quarters or triangles.
- Chickpea “Egg” Salad
Savory and satisfying, eggy without the eggs.
Ingredients:
1 cup canned chickpeas (mashed)
2 tbsp vegan mayo
1 tsp Dijon mustard
¼ tsp turmeric (for color)
1 tbsp chopped green onion or chives
Black salt (kala namak) for that eggy flavor (optional but awesome)
Salt & pepper to taste
Bread of choice, crusts removed
How to Make:
Mash chickpeas with a fork or potato masher.
Mix in mayo, mustard, turmeric, and seasonings.
Spread on bread and close, then cut into dainty pieces.
- Roasted Red Pepper & Hummus
Bold flavor, super simple.
Ingredients:
½ cup hummus (any flavor works—classic, garlic, etc.)
Jarred roasted red peppers, patted dry and sliced
Fresh spinach or arugula (optional)
Multigrain or rye bread, crusts removed
How to Make:
Spread hummus on both slices.
Add roasted red pepper and greens.
Close sandwich, cut, and serve.
