Vegan Tahini Pasta
Ingredients:
- 8 oz (about 225g) pasta of your choice (such as spaghetti, fettuccine, or penne)
- 1/4 cup tahini
- 2 cloves garlic, minced
- 2 tablespoons lemon juice
- 2 tablespoons nutritional yeast
- 2 tablespoons soy sauce or tamari
- 1 tablespoon olive oil
- 1/4 teaspoon red pepper flakes (adjust to taste)
- Salt and pepper to taste
- Chopped fresh parsley, for garnish (optional)
- Toasted sesame seeds, for garnish (optional)
Instructions:
- Cook the Pasta:
- Cook the pasta according to the package instructions until al dente. Drain and set aside, reserving about 1/2 cup of pasta water.
- Prepare the Tahini Sauce:
- In a small bowl, whisk together the tahini, minced garlic, lemon juice, nutritional yeast, soy sauce (or tamari), olive oil, red pepper flakes, salt, and pepper until smooth.
- Combine Pasta and Sauce:
- Return the cooked pasta to the pot or a large skillet over low heat.
- Pour the tahini sauce over the pasta and toss well to coat, adding a splash of reserved pasta water if needed to thin out the sauce and help it evenly coat the pasta.
- Heat Through:
- Cook the pasta and sauce together over low heat, stirring frequently, until heated through, about 2-3 minutes. Be careful not to let the sauce stick to the bottom of the pan.
- Serve:
- Once heated through, remove the pasta from heat.
- Divide the pasta among serving plates or bowls.
- Garnish with chopped fresh parsley and toasted sesame seeds, if desired.
- Enjoy:

Tips:
- Feel free to customize this recipe by adding your favorite vegetables, such as steamed broccoli, roasted cherry tomatoes, or sautéed spinach.
- Adjust the seasonings to your taste preferences. If you prefer a milder sauce, reduce the amount of red pepper flakes.
