Vegan taco Salad
Ingredients:
1 can black beans, drained and rinsed
1/2 red onion, diced
1 red bell pepper, diced
1 avocado, diced
1/2 cup corn
1/4 cup fresh cilantro, chopped
1/4 cup lime juice
1/4 cup olive oil
1/2 tsp cumin
1/2 tsp chili powder
Salt and pepper, to taste
1 head of lettuce, chopped
1 cup tortilla chips, crushed
Instructions:
In a large bowl, mix together the black beans, red onion, red bell pepper, avocado, corn, and cilantro.
In a separate small bowl, whisk together the lime juice, olive oil, cumin, chili powder, salt, and pepper.
Pour the dressing over the salad and mix well.
Arrange the chopped lettuce on a serving platter.
Spoon the black bean mixture over the lettuce.
Top with the crushed tortilla chips.
Serve immediately and enjoy!
Optional: You can also add some vegan cheese, salsa, or hot sauce on top for some extra flavor.
