Vegan crab cakes

Ingredients
1 can chickpeas
1 can artichoke hearts
1 can hearts of palm
All drained.
Chopped pepper, onion, garlic and celery chopped. Sauté in pan for 4-5 minutes on medium heat.
Seasonings:
Old bay
Salt
Pepper
Garlic powder
Lemon zest
Lemon juice
Capers (optional, for more seafood flavor)
Nori (optional, for more seafood flavor)
-put all canned and drained ingredients in food processor with seasonings.
-Sauté pepper, onion, garlic and celery in pan for 4-5 minutes.
-fold in sautéd veggies to mixture.
-roll into balls and coat with panko bread crumbs and pan fry on medium heat for 2-3 minutes each side or golden brown.
Sauce:
-vegan Mayo
-ketchup
-fresh garlic
-relish
-lemon juice
-Cajun seasoning
-salt and pepper
-chopped scallions
This was our first time making the crab cakes! They could have had a bit more of a “seafood” taste
