Vegan Sweet Potato Kale

INGREDIEN

▪️Roasted Za’atar Chickpeas
▪️Roasted Dill Carrots
▪️Baked Sweet Potato
▪️Kale
▪️Spiraled Cucumber
Topped with Honey Mustard sprinkled with Gochugaru
Preheat oven to 350°
Clean your veggies
Drain your Chickpeas
Place whole carrots, Chickpeas and sweet potatoes on a baking sheet
Drizzle veggies with Avocado oil.. once well coated in oil add whatever Seasonings you want.
Roast in oven for 30 to 45 mins..
Plating: place sweet potato opened to the side of your plate or bowl then place your cucumber on the opposite side. Fill the center between with massaged Kale, carrots, onion and top with Chickpeas and your dressing of choice.

$17 grocery bill total for 2 people (with portioned servings the ingredients last 1 to 2 weeks)
If you dice and boil the sweet potato then freeze the cubes you can have sweet potato for up to a month.
Same with Kale wash and dry then freeze up to a month you can use it in almost any meal.
Seasonings and oils not included in the total because I have had my Seasonings for a while.
