Vegan Southwest Rice Bowl


Ingredients:
1 can of black beans, drained and rinsed
1 avocado, diced
1 red bell pepper, diced
1 yellow corn, cooked
1/2 red onion, diced
1 cup of cherry tomatoes, halved
1/2 cup of cilantro leaves
1 lime, juiced
Salt, to taste
1 teaspoon of cumin
1 teaspoon of chili powder
2 tablespoons of olive oil
1 cup of cooked brown rice
1/2 cup of salsa
1/2 cup of vegan sour cream
Instructions:
In a large bowl, mix together the black beans, avocado, red bell pepper, corn, red onion, cherry tomatoes, cilantro, lime juice, salt, cumin, chili powder, and olive oil.
In a separate pan, cook the brown rice according to package instructions.
Divide the brown rice among 4 bowls.
Top each bowl with a quarter of the bean and vegetable mixture.
Spoon salsa and vegan sour cream over each bowl.
Serve and enjoy!
