Ingredients
1 cup vegan butter, softened
½ cup powdered sugar (plus more for rolling)
1 teaspoon vanilla extract
1½ cups all-purpose flour
¾ cup finely chopped pecans
Instructions
Preheat oven
Preheat to 350°F (175°C). Line a baking sheet with parchment paper.
Mix dough (1 bowl!)
In a large bowl, cream together vegan butter and powdered sugar until light and fluffy.
Mix in vanilla extract.
Add dry ingredients
Stir in flour until just combined, then fold in chopped pecans.
Shape cookies
Roll dough into 1-tablespoon-sized balls and place on the baking sheet.
Bake
Bake for 12–15 minutes, until bottoms are just lightly golden (tops should stay pale).
Sugar coating
Let cookies cool for 5 minutes, then gently roll in powdered sugar.
Once completely cool, roll again for that classic snowball look.
