Vegan Potato Patties


Ingredients:
4 large potatoes, peeled and boiled
1/2 cup breadcrumbs
1/4 cup finely chopped fresh herbs (such as parsley, chives, and dill)
2 cloves garlic, minced
1 small onion, finely chopped
2 tablespoons nutritional yeast (optional)
2 tablespoons flaxseed meal mixed with 6 tablespoons water (flax egg)
Salt and pepper to taste
Olive oil for frying
Instructions:
In a large bowl, mash the boiled potatoes until smooth and creamy.
Add the breadcrumbs, fresh herbs, minced garlic, chopped onion, nutritional yeast (if using), flax egg, salt, and pepper. Mix well until all the ingredients are evenly combined.
Shape the mixture into patties of your desired size. If the mixture is too sticky, you can lightly wet your hands with water or oil to make it easier to handle.
Heat a thin layer of olive oil in a skillet over medium heat.
Carefully place the potato patties in the skillet and cook for about 4-5 minutes on each side, or until golden brown and crispy.
Once cooked, transfer the patties to a plate lined with paper towels to absorb any excess oil.
Serve the vegan potato patties with a side salad, vegan sour cream, or your favorite dipping sauce.
