Vegan Potato Curry
Ingredients:
- 3-4 medium-sized potatoes, peeled and diced
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1-inch piece of ginger, grated or minced
- 1-2 green chilies, finely chopped (adjust to taste)
- 1 teaspoon cumin seeds
- 1 teaspoon ground turmeric
- 1 teaspoon ground coriander
- 1 teaspoon garam masala
- 1/2 teaspoon chili powder (adjust to taste)
- 1 can (400g) diced tomatoes
- 1 can (400ml) coconut milk
- Salt to taste
- Fresh cilantro leaves, chopped (for garnish)
- 2 tablespoons cooking oil
- Optional: squeeze of fresh lemon juice
Instructions:
- Prepare the Potatoes:
- Peel and dice the potatoes into cubes. Rinse them under cold water and set aside.
- Saute the Aromatics:
- Heat the cooking oil in a large pan or pot over medium heat. Add the cumin seeds and let them sizzle for a few seconds until fragrant.
- Add the chopped onions, minced garlic, grated ginger, and green chilies. Saute until the onions turn translucent and the mixture becomes aromatic, about 3-4 minutes.
- Add Spices:
- Add the ground turmeric, ground coriander, garam masala, and chili powder. Stir well to coat the onions and spices evenly. Cook for another minute to toast the spices slightly.
- Cook the Potatoes:
- Add the diced potatoes to the pan. Mix well with the spice mixture and saute for 2-3 minutes.
- Simmer:
- Pour in the diced tomatoes with their juices. Stir to combine everything. Allow the mixture to come to a simmer.
- Add Coconut Milk:
- Once simmering, pour in the coconut milk. Stir well and bring the curry back to a simmer.
- Cook Until Potatoes are Tender:
- Reduce the heat to low and let the curry simmer gently, uncovered, stirring occasionally. Cook until the potatoes are tender and cooked through, about 15-20 minutes. If the curry becomes too thick, you can add a little water.
- Adjust Seasoning:
- Taste and adjust salt and chili powder if needed. If you like a hint of acidity, you can add a squeeze of fresh lemon juice at this stage.
- Finish and Serve:
- Once the potatoes are cooked to your liking and the curry has thickened to your desired consistency, remove from heat.
- Garnish with chopped fresh cilantro leaves before serving.
- Serve:
- Serve the Vegan Potato Curry hot with steamed rice or your favorite bread (like naan or chapati).
