Vegan Potato Curry

Ingredients:

  • 3-4 medium-sized potatoes, peeled and diced
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1-inch piece of ginger, grated or minced
  • 1-2 green chilies, finely chopped (adjust to taste)
  • 1 teaspoon cumin seeds
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground coriander
  • 1 teaspoon garam masala
  • 1/2 teaspoon chili powder (adjust to taste)
  • 1 can (400g) diced tomatoes
  • 1 can (400ml) coconut milk
  • Salt to taste
  • Fresh cilantro leaves, chopped (for garnish)
  • 2 tablespoons cooking oil
  • Optional: squeeze of fresh lemon juice

Instructions:

  1. Prepare the Potatoes:
    • Peel and dice the potatoes into cubes. Rinse them under cold water and set aside.
  2. Saute the Aromatics:
    • Heat the cooking oil in a large pan or pot over medium heat. Add the cumin seeds and let them sizzle for a few seconds until fragrant.
    • Add the chopped onions, minced garlic, grated ginger, and green chilies. Saute until the onions turn translucent and the mixture becomes aromatic, about 3-4 minutes.
  3. Add Spices:
    • Add the ground turmeric, ground coriander, garam masala, and chili powder. Stir well to coat the onions and spices evenly. Cook for another minute to toast the spices slightly.
  4. Cook the Potatoes:
    • Add the diced potatoes to the pan. Mix well with the spice mixture and saute for 2-3 minutes.
  5. Simmer:
    • Pour in the diced tomatoes with their juices. Stir to combine everything. Allow the mixture to come to a simmer.
  6. Add Coconut Milk:
    • Once simmering, pour in the coconut milk. Stir well and bring the curry back to a simmer.
  7. Cook Until Potatoes are Tender:
    • Reduce the heat to low and let the curry simmer gently, uncovered, stirring occasionally. Cook until the potatoes are tender and cooked through, about 15-20 minutes. If the curry becomes too thick, you can add a little water.
  8. Adjust Seasoning:
    • Taste and adjust salt and chili powder if needed. If you like a hint of acidity, you can add a squeeze of fresh lemon juice at this stage.
  9. Finish and Serve:
    • Once the potatoes are cooked to your liking and the curry has thickened to your desired consistency, remove from heat.
    • Garnish with chopped fresh cilantro leaves before serving.
  10. Serve:
    • Serve the Vegan Potato Curry hot with steamed rice or your favorite bread (like naan or chapati).
