💚 Vegan Pistachio Cheesecake (No-Bake)

🌰 INGREDIENTS
🥧 Crust:
1 ½ cups vegan graham cracker crumbs or crushed digestive biscuits
1/4 cup coconut oil or vegan butter, melted
2 tbsp maple syrup (optional, for sweetness)
🍰 Filling:
1 ½ cups raw cashews, soaked in water for 4–6 hours (or in hot water for 1 hour)
1/2 cup shelled pistachios (unsalted, raw or roasted)
1/2 cup full-fat coconut milk (from a can)
1/3 cup maple syrup or agave
1/4 cup coconut oil, melted
2 tbsp lemon juice
1 tsp vanilla extract
Pinch of salt
Optional: 1–2 tsp matcha powder or spinach powder for greener color (flavor-neutral)

Crushed pistachios
Vegan whipped cream
Melted dark chocolate drizzle
Halloween sprinkles, if desired
🧑🍳 INSTRUCTIONS
- Prepare the crust:
In a mixing bowl, combine graham cracker crumbs, melted coconut oil, and maple syrup.
Press the mixture firmly into the base of a lined 8-inch springform pan. Use the bottom of a glass to flatten evenly.
Chill in the freezer while you make the filling.
- Blend the filling:
Drain soaked cashews and add them to a high-speed blender or food processor with all other filling ingredients: pistachios, coconut milk, maple syrup, coconut oil, lemon juice, vanilla, and salt.
Blend until completely smooth and creamy (scrape down sides as needed). This may take 1–3 minutes depending on your blender.
✅ Tip: Add a touch more coconut milk if it’s too thick to blend.
- Assemble and chill:
Pour the pistachio filling over the crust and smooth out the top.
Tap the pan gently on the counter to remove air bubbles.
Refrigerate for at least 4–6 hours, or preferably overnight, until fully set.
- Decorate and serve:
Once firm, remove the cheesecake from the pan.
Top with crushed pistachios, vegan whipped cream, chocolate drizzle, or Halloween decorations.

Freezer: Freeze slices in an airtight container for up to 2 months. Let thaw for 10–15 minutes before serving.
