Vegan Pancakes
Ingredients:
1 cup all-purpose flour
2 tablespoons sugar
2 teaspoons baking powder
1/4 teaspoon salt
1 cup unsweetened non-dairy milk
2 tablespoons vegetable oil
1 teaspoon vanilla extract
1 tablespoon apple cider vinegar
Non-stick cooking spray or additional oil for cooking
Instructions:
In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.
In a separate bowl, whisk together the non-dairy milk, vegetable oil, vanilla extract, and apple cider vinegar.
Pour the wet ingredients into the dry ingredients and whisk until just combined (a few lumps are okay).
Heat a non-stick pan or griddle over medium heat and lightly coat with cooking spray or oil.
Use a 1/4 cup measuring cup to scoop batter onto the pan.
Cook until the edges start to look dry and bubbles form on the surface, then flip and cook for another minute or two.
Serve with your favorite toppings, such as maple syrup, fruit, or vegan butter.
