Vegan Oatmeal Chocolate Chip Cookies

Ingredients

  • ½ cup vegan butter, softened
  • ½ cup brown sugar, packed
  • ¼ cup granulated sugar
  • ¼ cup unsweetened applesauce (egg substitute)
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1½ cups rolled oats
  • ¾ cup vegan chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large bowl, cream together the vegan butter, brown sugar, and granulated sugar until light and fluffy.
  3. Mix in the applesauce and vanilla until smooth.
  4. In a separate bowl, whisk together the flour, baking soda, and salt.
  5. Add dry ingredients to wet ingredients and mix until just combined.
  6. Fold in the rolled oats and vegan chocolate chips.
  7. Scoop 2-tablespoon portions onto the baking sheet, spacing them apart.
  8. Bake for 10–12 minutes, until edges are lightly golden but centers are soft.
  9. Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack.
