Vegan noodle stir-fry


Ingredients:
8 oz. noodles (such as udon or soba)
1 tbsp oil
1 onion, sliced
2 garlic cloves, minced
1 red bell pepper, sliced
2 cups broccoli florets
1 cup sliced mushrooms
1 tbsp soy sauce
1 tbsp hoisin sauce
1 tbsp rice vinegar
1 tsp sriracha sauce (optional)
1/4 cup chopped peanuts (optional)
Fresh cilantro or green onions, chopped (optional)
Instructions:
Cook the noodles according to package directions. Drain and set aside.
Heat the oil in a large skillet or wok over medium-high heat. Add the onion and garlic and cook for 2-3 minutes, until fragrant.
Add the bell pepper, broccoli, and mushrooms to the skillet and cook for 5-7 minutes, until the vegetables are tender.
In a small bowl, whisk together the soy sauce, hoisin sauce, rice vinegar, and sriracha sauce (if using).
Add the cooked noodles to the skillet with the vegetables, and pour the sauce over the top. Toss everything together until the noodles and vegetables are evenly coated in the sauce.
Serve the stir-fry hot, garnished with chopped peanuts and fresh cilantro or green onions, if desired
