VEGAN No-Bake Lemon Eclair Cake

Ingredients:
- For the Lemon Pudding:
- 1 cup raw cashews (soaked in water for at least 4 hours or overnight)
- 1 cup coconut cream (the thick part from a can of full-fat coconut milk)
- 1/2 cup maple syrup or agave nectar
- 1/2 cup fresh lemon juice
- Zest of 2 lemons
- 1 teaspoon vanilla extract
- For the Graham Cracker Layers:
- 2-3 packages vegan graham crackers (check labels to ensure they are vegan)
- For the Lemon Glaze:
- 1 cup powdered sugar
- 2 tablespoons fresh lemon juice
- 1 tablespoon almond milk (or any plant-based milk)
Instructions:
- Prepare the Lemon Pudding:
- Drain and rinse the soaked cashews.
- In a high-speed blender, combine the cashews, coconut cream, maple syrup, lemon juice, lemon zest, and vanilla extract.
- Blend until smooth and creamy, scraping down the sides as needed to ensure everything is well combined.
- Assemble the Cake:
- In a 9×13 inch baking dish, arrange a layer of vegan graham crackers to cover the bottom.
- Spread half of the lemon pudding over the graham crackers.
- Add another layer of graham crackers on top of the pudding.
- Spread the remaining lemon pudding over the second layer of graham crackers.
- Finish with a final layer of graham crackers.
- Prepare the Lemon Glaze:
- In a small bowl, whisk together the powdered sugar, lemon juice, and almond milk until smooth.
- Pour the glaze over the top layer of graham crackers, spreading it evenly.
- Chill the Cake:
- Cover the dish with plastic wrap or foil.
- Refrigerate for at least 4 hours, or overnight, to allow the flavors to meld and the graham crackers to soften.
- Serve:
- Once chilled, slice and serve the cake.
- Optionally, garnish with fresh lemon zest or slices for an extra touch of lemon flavor.
