VEGAN No-Bake Lemon Eclair Cake

Ingredients:

  • For the Lemon Pudding:
    • 1 cup raw cashews (soaked in water for at least 4 hours or overnight)
    • 1 cup coconut cream (the thick part from a can of full-fat coconut milk)
    • 1/2 cup maple syrup or agave nectar
    • 1/2 cup fresh lemon juice
    • Zest of 2 lemons
    • 1 teaspoon vanilla extract
  • For the Graham Cracker Layers:
    • 2-3 packages vegan graham crackers (check labels to ensure they are vegan)
  • For the Lemon Glaze:
    • 1 cup powdered sugar
    • 2 tablespoons fresh lemon juice
    • 1 tablespoon almond milk (or any plant-based milk)

Instructions:

  1. Prepare the Lemon Pudding:
    • Drain and rinse the soaked cashews.
    • In a high-speed blender, combine the cashews, coconut cream, maple syrup, lemon juice, lemon zest, and vanilla extract.
    • Blend until smooth and creamy, scraping down the sides as needed to ensure everything is well combined.
  2. Assemble the Cake:
    • In a 9×13 inch baking dish, arrange a layer of vegan graham crackers to cover the bottom.
    • Spread half of the lemon pudding over the graham crackers.
    • Add another layer of graham crackers on top of the pudding.
    • Spread the remaining lemon pudding over the second layer of graham crackers.
    • Finish with a final layer of graham crackers.
  3. Prepare the Lemon Glaze:
    • In a small bowl, whisk together the powdered sugar, lemon juice, and almond milk until smooth.
    • Pour the glaze over the top layer of graham crackers, spreading it evenly.
  4. Chill the Cake:
    • Cover the dish with plastic wrap or foil.
    • Refrigerate for at least 4 hours, or overnight, to allow the flavors to meld and the graham crackers to soften.
  5. Serve:
    • Once chilled, slice and serve the cake.
    • Optionally, garnish with fresh lemon zest or slices for an extra touch of lemon flavor.

Tips:

  • Make Ahead: This cake is perfect for making a day in advance, as it needs time to set in the refrigerator.
  • Variations: For a different flavor, you can use lime juice and zest instead of lemon for a vegan no-bake lime eclair cake.
  • Garnish: Fresh berries, mint leaves, or a dusting of powdered sugar can add a beautiful finishing touch.
