Vegan meatloaf with a ketchup and brown sugar glaze

Ingredients

1 package Impossible burger

2 tablespoons ketchup

1 teaspoon garlic powder

1 teaspoon vegan Worcestershire sauce

1 teaspoon onion powder

½ teaspoon parsley

¼ teaspoon salt

¼ teaspoon pepper

½ teaspoon smoked paprika

¼ teaspoon liquid smoke

  • ¼ teaspoon umami mushroom powder
  • Diced yellow, green and red bell peppers
  • Diced onion and diced enoki mushrooms
  • 1/4 cup of vegan beef broth seasoning ……..

Cooked on 350 for 30 mins. Put on glaze then back in the over for 15 more mins. I think next time I’ll add more bread crumbs it didn’t stay together as good as I wanted. Or maybe I should have let it cook completely but I wanted to eat it!! Lol. The taste was so great!!!
