Ingredients:
1 tbsp olive oil
1 onion, diced
1 red bell pepper, diced
2 cloves of garlic, minced
1 cup green or brown lentils, cooked and drained
1 can diced tomatoes
2 tbsp tomato paste
2 tbsp soy sauce
2 tbsp apple cider vinegar
2 tsp brown sugar
1 tsp mustard powder
1 tsp smoked paprika
Salt and pepper, to taste
4 whole wheat buns
Instructions:
Heat the olive oil in a large skillet over medium heat. Add the onion, red bell pepper, and garlic and sauté for 5-7 minutes or until the vegetables are soft.
Add the cooked lentils, diced tomatoes, tomato paste, soy sauce, apple cider vinegar, brown sugar, mustard powder, smoked paprika, salt and pepper. Stir well to combine.
Bring the mixture to a simmer and let cook for 10-15 minutes or until the sauce has thickened.
Taste and adjust the seasoning as needed.
Serve the lentil mixture on whole wheat buns, top with your favourite toppings, like lettuce, avocado, or vegan cheese.
