Vegan Lemon Dill Hummus

Ingredients:

  • 1 can (15 oz) chickpeas, drained and rinsed
  • 3 tbsp tahini
  • Juice of 1 large lemon (about 3 tbsp)
  • Zest of 1 lemon
  • 2 tbsp fresh dill, chopped (plus more for garnish)
  • 1 clove garlic, minced
  • 2 tbsp olive oil
  • ¼ tsp cumin (optional)
  • ¼ tsp salt (or to taste)
  • ¼ tsp black pepper
  • 2-4 tbsp water (for desired consistency)

Instructions:

  1. In a food processor, blend chickpeas, tahini, lemon juice, lemon zest, garlic, cumin, salt, and black pepper.
  2. Slowly drizzle in olive oil while blending until smooth.
  3. Add fresh dill and blend briefly to incorporate.
  4. Add water, 1 tablespoon at a time, until you reach your preferred consistency.
  5. Taste and adjust seasoning as needed.
  6. Transfer to a bowl, drizzle with olive oil, and garnish with extra dill and lemon zest.

Serving Suggestions:

  • Serve with pita, crackers, or fresh veggies.
  • Spread on sandwiches or wraps.
