Vegan Lemon Dill Hummus

Ingredients:
- 1 can (15 oz) chickpeas, drained and rinsed
- 3 tbsp tahini
- Juice of 1 large lemon (about 3 tbsp)
- Zest of 1 lemon
- 2 tbsp fresh dill, chopped (plus more for garnish)
- 1 clove garlic, minced
- 2 tbsp olive oil
- ¼ tsp cumin (optional)
- ¼ tsp salt (or to taste)
- ¼ tsp black pepper
- 2-4 tbsp water (for desired consistency)
Instructions:
- In a food processor, blend chickpeas, tahini, lemon juice, lemon zest, garlic, cumin, salt, and black pepper.
- Slowly drizzle in olive oil while blending until smooth.
- Add fresh dill and blend briefly to incorporate.
- Add water, 1 tablespoon at a time, until you reach your preferred consistency.
- Taste and adjust seasoning as needed.
- Transfer to a bowl, drizzle with olive oil, and garnish with extra dill and lemon zest.
Serving Suggestions:
- Serve with pita, crackers, or fresh veggies.
- Spread on sandwiches or wraps.
