VEGAN KIDNEY BEAN PATTIES


Ingredients:
1 can (400 gramms) kidney beans
2 tablespoon oatflour (or any other flour!) plus more flour for rolling the patties later
2 small or 1 big garlic
1 fresh red chilli halved
1 small red onion halved (white is also okay)
bunch of parsley chopped (kale works very well too)
1 and a half tablespoon cumin
1 tablespoon ground coriander
½ tablespoon smoked paprika
⅓ tablespoon pepper (or more if you like!)
½ cayenne or chilli pepper (optional)
3 tablespoon olive oil
1 or ½ tablespoon salt (you can add more or less)
The other good thing in this recipe is how easy it is to make it. This is for all lazy foodies like me
Just toss all the ingredients in a food processor and mix it until its a smooth paste. Should be little crumbly but sticky. If it gets too crumbly just add a little water. If you have time, let the mix cool in the fridge for 30 min., but if not, no worries. Heat your oil in a pan. Sprinkle a little flour over the formed patties and get your hands floury so you can easily form them.
Fry them in medium heat for about 20 minutes.
I flipped mine every 5 minutes.
Serving idea: with rice, salad or in a pita bread with lemon tahini sauce and onions.
For the tahini sauce:
1 tablespoon tahini
juice of a half lime or lemon
1 minced garlic
2 tablespoon olive oil
salt and pepper
just mix all ingredients and that’s it!
