Yields: 12 donuts
Prep Time: 30 minutes (plus rising)
Cook Time: 15–20 minutes
Total Time: 1 hr 30 min
🥣 Ingredients
For the Donuts
- 2 ¼ tsp active dry yeast (1 packet)
- ¾ cup warm non-dairy milk (110°F / 43°C)
- ¼ cup granulated sugar
- 3 tbsp vegan butter, melted
- 1 tsp vanilla extract
- 2 cups all-purpose flour (plus extra for dusting)
- ½ tsp salt
- Oil for frying (neutral oil like canola or vegetable)
For the Glaze
- 1 ½ cups powdered sugar
- 2–3 tbsp non-dairy milk
- ½ tsp vanilla extract
👩🍳 Instructions
1. Activate the yeast
- In a small bowl, combine warm non-dairy milk and 1 tsp sugar.
- Sprinkle yeast over top and let sit 5–10 minutes until foamy.
2. Make the dough
- In a large bowl, mix remaining sugar, melted vegan butter, and vanilla.
- Add foamy yeast mixture and stir.
- Gradually mix in flour and salt until a soft, sticky dough forms.
- Knead dough on a floured surface 5–7 minutes until smooth and elastic.
3. Let dough rise
- Place dough in a lightly oiled bowl and cover with a clean towel.
- Let rise 1–1.5 hours in a warm place, until doubled in size.
4. Shape the donuts
- Roll dough to ½-inch thickness on a floured surface.
- Cut circles with a 3-inch cutter and smaller 1-inch cutter for holes.
- Place on parchment-lined tray, cover, and let rest 15–20 minutes.
5. Fry the donuts
- Heat oil in a deep pan to 350°F (175°C).
- Fry donuts 1–2 minutes per side until golden brown.
- Transfer to a wire rack lined with paper towels to drain.
6. Make the glaze
- In a bowl, whisk powdered sugar, non-dairy milk, and vanilla until smooth.
- Adjust consistency: add more sugar to thicken, more milk to thin.
7. Glaze the donuts
- Dip warm donuts into glaze, covering completely.
- Place back on wire rack to let glaze set (~5–10 minutes).
- Optional: drizzle with chocolate or sprinkle with crushed nuts for decoration.
💡 Tips
- Use room temperature ingredients for the fluffiest donuts.
- Don’t overcrowd the fryer; fry 2–3 donuts at a time.
- For lighter donuts, you can bake at 375°F (190°C) for 12–15 minutes instead of frying.
⭐ Variations
- Chocolate Glaze: Mix ¼ cup cocoa powder into glaze.
- Maple Glaze: Substitute non-dairy milk with 2 tbsp maple syrup + 1–2 tbsp plant milk.
- Cinnamon Sugar: Skip glaze and toss warm donuts in cinnamon + sugar mixture.
- Filled Donuts: Inject with jam, chocolate, or vegan custard after glazing.
