Ingredients:
1 cup Oatly oat milk
1-2 scoops vegan vanilla protein powder
1/2 tsp peppermint extract
1-2 handfuls of vegan Thin Mint cookies (or any vegan chocolate mint cookies)
1-2 cups ice
Instructions:
In a blender, add Oatly oat milk, vanilla protein powder, and peppermint extract.
Blend until smooth.
Add in the Thin Mint cookies and blend until they are broken down into small pieces.
Add in the ice and blend until the shake is smooth and creamy.
Taste and adjust sweetness or mint flavor as desired.
Serve immediately in a glass, and top with additional crumbled Thin Mint cookies, if desired.
