vegan crepes recipe
Ingredients:
- 1 cup all-purpose flour
- 1 1/2 cups plant-based milk (such as almond milk, soy milk, or oat milk)
- 2 tablespoons maple syrup or sugar
- 1/4 teaspoon salt
- 2 tablespoons vegetable oil (plus more for cooking)
- 1 teaspoon vanilla extract (optional)
Instructions:
- Mix Dry Ingredients: In a mixing bowl, whisk together the flour and salt.
- Add Wet Ingredients: Gradually whisk in the plant-based milk, maple syrup (or sugar), vegetable oil, and vanilla extract (if using), until you have a smooth batter. The consistency should be similar to thin pancake batter. If it’s too thick, you can add a bit more milk.
- Rest the Batter: Let the batter rest for about 10-15 minutes. This allows the flour to absorb the liquid and helps achieve a smoother texture.
- Cook the Crepes:
- Heat a non-stick skillet or crepe pan over medium heat. Lightly grease the pan with a little vegetable oil.
- Pour about 1/4 cup of batter into the pan, swirling it around quickly to spread it thinly and evenly across the bottom.
- Cook for about 1-2 minutes, until the edges start to lift slightly and the bottom is lightly golden brown.
- Carefully flip the crepe using a spatula, and cook for another 1-2 minutes on the other side. Adjust heat as needed to prevent burning.
- Repeat: Transfer the cooked crepe to a plate and cover with a clean kitchen towel to keep warm. Continue cooking the remaining batter, stacking the crepes on top of each other as you go. You can lightly re-grease the pan as needed if the crepes start to stick.
- Serve: Once all the crepes are cooked, fill them with your favorite vegan fillings such as fresh fruits, vegan chocolate spread, jam, or a savory filling like sautéed vegetables and vegan cheese.
