VEGAN COCADAS VEGANAS!
Ingredients:
2 cups shredded coconut
1/2 cup maple syrup or agave nectar
1/4 cup coconut milk
1/4 cup coconut oil, melted
1 teaspoon vanilla extract
1/4 teaspoon salt
Instructions:
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a large mixing bowl, combine the shredded coconut, maple syrup or agave nectar, coconut milk, melted coconut oil, vanilla extract, and salt. Stir well to combine.
Drop spoonfuls of the mixture onto the prepared baking sheet, pressing down lightly to flatten each cocada.
Bake in the preheated oven for 12-15 minutes, or until the edges are golden brown.
Remove from the oven and allow the cocadas to cool completely on the baking sheet.
Once cooled, carefully remove the cocadas from the parchment paper and transfer them to an airtight container for storage. They can be kept at room temperature for up to a week.
