Vegan Banana Pudding

Ingredients:
2 ripe bananas, mashed
1 1/2 cups unsweetened almond milk (or plant milk of choice)
2 tbsp cornstarch (or 1 tbsp agar powder for a firmer texture)
2 tbsp monk fruit sweetener (or sweetener of choice)
1/2 tsp vanilla extract
1/4 tsp cinnamon (optional)
A pinch of salt
Instructions:
In a small saucepan, whisk together almond milk, cornstarch (or agar), monk fruit sweetener, vanilla, cinnamon, and salt until smooth.
Heat over medium, stirring constantly, until the mixture thickens (about 5-7 minutes).
Remove from heat and stir in mashed bananas. Blend with an immersion blender for extra smoothness.
Pour into serving cups and chill for at least 2 hours until set.
Serve with a sprinkle of cinnamon or sugar-free granola for crunch!
