Vegan Banana Cake
Ingredients:
- 3 ripe bananas
- 1/2 cup unsweetened almond milk (or any plant-based milk of your choice)
- 1/3 cup melted coconut oil (or any vegetable oil)
- 1 teaspoon vanilla extract
- 1/2 cup maple syrup (or agave syrup)
- 1 3/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1 teaspoon cinnamon (optional)
- 1/2 cup chopped walnuts or pecans (optional)
Instructions:
- Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.
- In a mixing bowl, mash the ripe bananas until smooth.
- Add almond milk, melted coconut oil, vanilla extract, and maple syrup to the mashed bananas. Mix well until combined.
- In a separate bowl, sift together the all-purpose flour, baking soda, baking powder, salt, and cinnamon (if using).
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
- If using chopped nuts, fold them into the batter.
- Pour the batter into the prepared loaf pan and spread it evenly.
- Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
- Once baked, remove the cake from the oven and let it cool in the pan for about 10 minutes. Then, transfer it to a wire rack to cool completely before slicing and serving.
