Vegan Banana Cake

Ingredients:

  • 3 ripe bananas
  • 1/2 cup unsweetened almond milk (or any plant-based milk of your choice)
  • 1/3 cup melted coconut oil (or any vegetable oil)
  • 1 teaspoon vanilla extract
  • 1/2 cup maple syrup (or agave syrup)
  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 teaspoon cinnamon (optional)
  • 1/2 cup chopped walnuts or pecans (optional)

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.
  2. In a mixing bowl, mash the ripe bananas until smooth.
  3. Add almond milk, melted coconut oil, vanilla extract, and maple syrup to the mashed bananas. Mix well until combined.
  4. In a separate bowl, sift together the all-purpose flour, baking soda, baking powder, salt, and cinnamon (if using).
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
  6. If using chopped nuts, fold them into the batter.
  7. Pour the batter into the prepared loaf pan and spread it evenly.
  8. Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  9. Once baked, remove the cake from the oven and let it cool in the pan for about 10 minutes. Then, transfer it to a wire rack to cool completely before slicing and serving.
