Vegan Apple Fritters


Ingredients:
1 1/2 cups all-purpose flour
1/3 cup granulated sugar
1 tablespoon baking powder
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/3 cup unsweetened applesauce
1/3 cup almond milk
1 teaspoon vanilla extract
1 1/2 cups chopped apples
Vegetable oil for frying
Powdered sugar for dusting
Instructions:
In a large mixing bowl, whisk together the flour, sugar, baking powder, salt, cinnamon, and nutmeg.
In a separate mixing bowl, whisk together the applesauce, almond milk, and vanilla extract.
Add the wet ingredients to the dry ingredients and mix until well combined. Fold in the chopped apples.
Heat about 1 inch of vegetable oil in a deep frying pan or pot over medium-high heat.
Use a cookie scoop or spoon to drop balls of the batter into the hot oil. Fry for about 2-3 minutes on each side, or until golden brown.
Use a slotted spoon to remove the fritters from the oil and transfer them to a paper towel-lined plate to cool.
Dust the fritters with powdered sugar and serve warm.
